Fried Green Tomato Sandwich w/Sundried Tomato Mayonnaise

Instructions

  1. Whisk the mayonnaise, sundried tomatoes, sugar, seasoning, lemon juice and garlic together.
  2. Place 4 fried tomato slices on a baking pan, top each with cheese, prosciutto, and then the remaining tomato slices. Heat in the oven to soften the cheese.
  3. Plate the sandwiches, top with the arugula, garnish with the mayonnaise, and serve.
